The bavette, aka sirloin flap steak or flap, is a boneless cut from the bottom sirloin, adjacent to the flank steak and located near the tri-tip. It has great flavor and is pleasantly chewy, making it the perfect steak for a quick sear. Serve it rare, thinly sliced. Also great for carne asada! The bavette is typically 1-1/2 to 2 pounds.
