The marrow bones come from the fore and hind shank, which is stripped of its exterior meat. Cut into 4 or 5-inch sections, these are excellent bones for stock or broth-making. The marrow is a delicacy that, when roasted, melts in your mouth and can be used to finish a steak, spread on toast and sprinkled with sea salt, or combined with butter to make marrow butter.
PLEASE NOTE: Marrow bones are available in 20-pound case quantities only. Because they spoil quickly, bones are always stocked and sold frozen, and should be kept frozen until you are ready to use them.
