Also known as filet mignon, tenderloin steaks are a cross cut of the long boneless tenderloin muscle, which is the most tender cut on the animal. The small, round steaks are sometimes called medallions or tournedos and typically weigh 4 ounces per steak.  Ours are packed two per package and are less expensive than you’ll find anywhere else at $28.00 per pound.
